Ok so I am a little late on the Chia seed wagon, however I seen a post on Pinterest on Overnight Chocolate Chia Seed Pudding from the Minimalist Baker and really wanted to try it. I looked it over and it seemed easy enough so I went for it.


Here is my attempt.


I did not follow her recipe exact and used what I had in the house:

  • 1 1/2 cups Silk Coconut milk Unsweetened
  • 1/3 cup chia seeds
  • 1/4 cup cacao or unsweetened cocoa powder
  • 2-5 Tbs maple syrup if not blending
  • 1/2 tsp ground cinnamon
  • 1/4 tsp sea salt optional
  • 1/2 tsp vanilla extract

I mixed everything in a bowl, except for the maple syrup. Once everything was mixed I divided it up into two portions, added the maple syrup, and then put it the fridge overnight.



When I was ready to eat it, I put it into a bowl and sliced a banana into it.


So it looks really pretty and yummy…. however I wasn’t crazy for it.

It was ok, just not great. It was easy to make, just not satisfying.

I am glad I added bananas to it. Next time to get a thicker consistency I plan to add a little bit of honey and blend a banana or two into it.
